Healthy Meal Plans: Week 24

This week continues with plenty of warm weather recipes including my favorite strawberry and spinach salad with homemade poppy seed dressing and some restaurant style cold peanut noodles!

It starts out with a delicious Broccoli and Cheese Frittata, Strawberry and Spinach Salad, and Slow Cooker Coconut Basil Chicken with tons of flavor. Monday brings Cold Sesame Noodles with Broccoli and Tuesday is Spice Crusted Pork Chops. Wednesday is a healthy One Pan Honey Mustard Chicken and Broccolini and Thursday is Black Olive and Feta Turkey Burgers. To end the week, meals include Lemon Pepper Mahi Mahi and Steak Tacos.

Microwave Blueberry Muffin in a Mug: I love making this muffin in the summer since I can get all the yummy flavor of muffins without ever having to turn on the stove. You will be shocked at how good these turn out.

Steak Tacos: These easy steak tacos are a favorite in our house, especially served with Mexican corn salad like in this week’s plan.

Cold Peanut Soba Noodles and Vegetables: Sometimes I crave something cool and refreshing when it is hot outside and these noodles are just that. They have the most delicious peanut sauce and are packed with good for you veggies.
